Recipe: This cheese sauce can go on pretty much anything

Chef Daron Goldstein joins us in the 207 kitchen to share his cheese sauce recipe.

PORTLAND, Maine — Chef Daron Goldstein from Provender Kitchen + Bar in Ellsworth joined us in the 207 studio to share some of his favorite recipes. 

This time, he showed us how to make a cheese sauce that can be used in a variety of ways. For his demonstration with us, he used it on top of pasta, cauliflower, and nacho chips. 

Equipment

  • Immersion Blender
  • Small Heavy Bottom Pot

Timing

  • Active Time: 15 Minutes
  • Total Time: 15 Minutes
  • Yield: 1.5 Cups

Ingredients

  • 6.8 ounces of your favorite cheese
  • 7 ounces milk
  • 1 teaspoon sodium citrate
  • 1/2 teaspoon salt

Combine and Melt

  • In a small pot over low heat, combine all ingredients listed above. 
  • Gently cook until cheese is melted.

Blend, Cool, and Serve

  • Using an immersion blender, blend the contents of the pan until smooth and uniform.
