The restaurant TIQA operates a cafe in "the castle" in Deering Oaks Park. The cafe will be open all winter with a fire pit and s'mores.

Made to order- fresh scrambled eggs with marinated tomatoes, lemon herb aioli, mixed greens and choice of melted cheese; cheddar, provolone, or American cheese on a warm homemade pita.

2 eggs, scrambled
1 t melted butter
1 slice cheese
2t marinated tomato
1 T aioli
Pinch mixed greens
½ t salt
½ t pepper
Fresh pita

Place pan in 475 degree oven to heat or on a medium flame on the stove. Add melted butter followed immediately by the eggs, salt, pepper and stir constantly. If the pan is hot enough it should cook in 45 seconds or so. Top with cheese of your choice and melt in oven or cover with a lid on the stove. Toast the pita lightly and dress with aioli, tomato, and lettuce .

Marinated tomatoes
4 tomatoes, diced
2T ground sumac
¼ cup lemon juice
½ cup white wine vinegar
1T parsley
2t salt
1/3 cup olive oil
2/3 cup vegetable oil

Dice tomatoes and set aside. Combine sumac, parsley, lemon, vinegar and salt by mixing together in a bowl. Next drizzle oils while stirring constantly. Pour over tomatoes and allow 2 hours to rest before serving.

Lemon herb aioli

3 egg yolks
3 cloves garlic
2T lemon juice
1T Dijon mustard
1 qt vegetable oil
¼ cup parsley
¼ cup chives
2t salt

In a food processor combine egg yolk, garlic, lemon juice, and mustard. Slowly drizzle in oil while motor is running. Add chopped herbs and salt once thickened. Water can be added to thin out sauce if desired, a few teaspoons at a time. Adjust seasoning to your liking with more/less garlic, lemon juice or salt.
